Cero Zinfandel is made in California from the Zinfandel grape. Zinfandel, which ripens in warm climates, is known for its rich fruit character, and oak aging complements the wine's structure and tannins.
The alcohol is gently removed from the wine using a vacuum distillation process at low pressure and temperatures below 28°C. The low temperature helps preserve the wine's original aromas without significantly altering the taste or texture.
Cero Zinfandel's flavors are dominated by plum, blackberry, and ripe red berries. The rich fruitiness is balanced by tannins and the structure provided by oak aging, and the overall result is full-bodied yet fresh.
Cero Zinfandel works particularly well with grilled and spicy dishes, red meat, game, cheeses, pasta dishes and pizza. Its rich fruitiness and tannins also make it a good choice for fuller vegetarian dishes.
